York’s culinary scene is thriving. The quality and variety of dining options has never been better, and we wanted to celebrate those people that have helped make our city’s food industry so deliciously dynamic. That’s why we’ve kicked off our new series of short films - ‘Chefs of York’, that sets out to do just that.

‘Chefs of York’ will go behind the scenes at some of our favourite restaurants, bakeries and bistros and introduce you to the chefs and cooks that make them tick. These people are the lifeblood running through the vein of York’s food world, and we’re delighted to be able to tell their stories.



After a bank holiday weekend of blue skies and sunshine, we looked for a dish to do the weather justice and found ourselves wandering into Il Paradiso del Cibo on Walmgate where chef and proprietor, Paolo Silesu, cooked up one of his favourite summer dishes - Spaghetti con Vongole e Bottarga.



This pasta dish is the perfect medley of seafood, fresh herbs and garlic, but the real punch is in the bottarga - a Sardinian delicacy made from grey mullet eggs. Once Paolo has grated some of this Mediterranean caviar onto the dish, you’re guaranteed to be transported to sun-kissed Mediterranean shores.
